The preparation
Heat the water, grind the coffee, and rinse the filter in the Chemex, with three filter layers toward the spout. Add the coffee and tare your scale.
Pour 90 g and wet all grounds.
From 30 seconds pour to 300 g, then finish to 500 g around 1:30.
Remove the brewer when the water has drained, swirl the carafe, and serve immediately.
